Proud Maggie - Arbol Hot Sauce
Inspired by a family recipe, Proud Maggie is a great addition to scrambled and fried eggs, tacos, and tostadas.
Made with a combination of fried árbol pepper, simmered tomato, garlic and sunflower seed oil.
Shake well before use.
Refrigerate after opening.
Chilaquiles Rojos
Ingredients:
1/2 jar of Proud Maggie Hot Sauce
4 Roma tomatoes, chopped
1 bag of Santo Pecado's corn chips
½ cup sour cream
½ cup shredded queso fresco, preferably Mexican cotija; if not available, firm feta will work
½ medium onion finely diced
2 Tbsp cooking oil
Pulled roasted chicken breast (optional)
How to make chilaquiles:

Preheat the oven at 350֯ F and heat up the chips for about 3 minutes in a baking tray lined with parchment paper. Take them out the oven and let them rest.
Blend the tomatoes with ½ cup of water and Proud Maggie Hot Sauce.
Add the oil to a large skillet on medium heat and once it is hot, add the blended tomatoes and hot sauce, stir and let cook for about 10 minutes at medium heat.
Add the corn chips to the sauce and coat them evenly using a spatula.

Serve immediately and garnish with sour cream, shredded cheese, diced onion, and pulled chicken breast, if desired.
